Material
- 200 g Hakka noodles
- 2 tablespoons cornflour
- Oil for frying
- 1 cup cabbage (finely chopped)
- 1 carrot (sliced long)
- 1 capsicum (finely chopped)
- 1 onion (thinly sliced)
- 1/4 cup green peas (chopped)
- 1 tablespoon garlic (finely chopped)
- 1 tsp ginger (finely chopped)
- 2 tablespoons of tomato ketchup
- 1 tablespoon chili sauce
- 1 tsp soy sauce
- 1 tsp vinegar
- 1 tablespoon of sugar
- Salt to taste
- 1/2 tsp black pepper powder
- 1 tablespoon cornflour (mixed with water)
- 2 cups water or vegetable stock
- Spring onion for garnish on top
- Fried egg as desired

- Boil the noodles according to packet instructions. Drain the water completely and mix 2 tbsp cornflour in it lightly.
- Heat oil in a wok and fry the noodles in small portions until golden and crispy. Place on tissue paper to remove excess oil.
- Heat 2 tbsp oil in another pan and fry garlic and ginger in it.
- Then add onion, carrot, peas, cabbage and capsicum and saute on high flame for 2 to 3 minutes. Let the vegetables remain slightly crunchy.
- Now add tomato ketchup, chili sauce, soy sauce, vinegar, sugar, salt and black pepper powder and mix well.
Add water or vegetable stock and bring the mixture to a boil. Then add the cornflour water mixture and keep stirring the sauce. Cook until the sauce thickens. - Place the crispy fried noodles on a serving plate. Spread hot vegetable sauce evenly over it. Add fried egg on top as desired.
- Garnish with spring onion at the end and serve hot immediately.
