Ingredients required to make Shakarpare
- 500 grams flour
- 250 grams semolina
- 1 bowl desi ghee (for moyan)
- ghee or oil for frying
- 2 bowls sugar
- 4 to 8 green cardamoms
- Half cup water (for syrup)
- Water as required to knead the dough
Method of making Shakarpare
First of all, mix flour and semolina well in a big vessel. Now add desi ghee to it and mix it well with both hands. To check whether the consistency is correct or not, press the mixture in your fist. If it starts getting tied, then understand that Moyan is absolutely right.
After this, prepare a stiff dough by adding water little by little and keep it covered for about 10 minutes. After the stipulated time, knead the dough well again and make small balls.
Now roll out the dough and cut it into square or diamond shapes with the help of a knife. Heat ghee or oil in a pan and fry the shakarpars on medium flame until they become golden and crisp.
On the other hand, prepare a thick syrup by adding sugar and water in a pan. Increase the aroma by adding cardamom powder to it. Now put the fried shakarpars in the syrup and keep stirring so that the sweet layer gets coated well.
When the syrup starts drying, turn off the gas and keep stirring for some time. After cooling completely, store the shakarpars in an airtight container.
