Dr. Fareha Shanam, senior dietitian of Gangaram Hospital, says that, Cooking and eating desi ghee is not considered completely wrong. According to experts, the smoke point of ghee is quite high (260 degrees). It is quite good, so it is considered safe to cook at normal temperature. However, if ghee is heated repeatedly on very high flame, it can be harmful for the body. In such a situation, it is very important to use ghee in the right quantity and in the right way.
Experts say that ghee should be consumed only in small quantities. For example, it is better to eat only 1 or 2 spoons of desi ghee a day. Eat it by applying it on roti or by shallow frying it…it is considered safe to use in both the cases.

Does the nutrition of desi ghee get lost after cooking?
Nutrients like healthy fat, vitamins A, D, E and K are found in desi ghee. But when ghee is heated at very high temperatures for a long time, some of its nutrition may be reduced.
