Shivani Agarwal’s Chana Chaat is a desi and nutritious snack, prepared with boiled gram, fresh vegetables and spicy chutney.

Material

  • 1 cup soaked and boiled gram
  • 1 tsp oregano
  • 1/2 tsp red chilli powder
  • 1/2 tsp salt
  • 1 tsp butter
  • 1 cucumber (sliced)
  • 1 onion (chopped)
  • 1 tomato (chopped)
  • 1 carrot (chopped)
  • 1/2 beetroot (chopped)
  • 50 grams cheese or curd
  • 2 green chillies
  • green coriander
  • salt to taste
  • lemon juice

Method

  • To make chutney, grind cheese/curd, green chilli, green coriander, salt and lemon juice in a mixer.
  • Heat butter in a pan and add boiled gram to it and roast it lightly.
  • Add salt, red chili powder and oregano to it and mix.
  • Now place roasted gram in the center of a plate.
  • Garnish with cucumber, onion, tomato, carrot and beetroot all around.
  • Garnish by pouring prepared chutney on top.
  • Finally serve with mint leaves.

Material

  • 2 cups black gram (boiled)
  • 1/2 cup potato (boiled)
  • 1 small onion (chopped)
  • 1 small tomato (chopped)
  • 1 small cucumber (chopped)
  • juice of 1 lemon
  • 1/2 tsp roasted cumin powder
  • 1/2 tsp chaat masala
  • black salt as per taste
  • salt to taste
  • 2 tbsp green coriander
  • mint leaves
  • 2–3 green chillies
  • 1 inch ginger
  • Tamarind (soaked)
  • 1 cup cold water
  • ice cubes

Method

  • Mix boiled gram, potato, onion, tomato and cucumber in a bowl.
  • Add roasted cumin, chaat masala, black salt, salt and lemon juice and mix.
  • Add green coriander on top.
  • For spicy water, grind coriander, mint, green chilli, ginger and tamarind.
  • Add cold water, roasted cumin, chaat masala, black salt and salt to it.
  • Add ice and refrigerate.
  • Pour this spicy water over chaat and serve.

Panch Chana Chaat Recipe

Material

  • 1/4 cup kidney beans
  • 1/4 cup cowpea
  • 1/4 cup white peas
  • 1/4 cup chickpea
  • 1/4 cup black gram
  • 1 pinch asafoetida
  • 1 tsp cumin
  • 1/2 tsp red chilli powder
  • 1/2 tsp turmeric powder
  • 1 tsp coriander powder
  • 1 tsp dry mango powder
  • 1/2 tsp oregano
  • salt to taste
  • 1 onion (chopped)

  • juice of 1 lemon

Method

  • Boil kidney beans, cowpea, white peas, chickpea, black gram in a cooker.
  • Heat ghee/oil in a pan, add asafoetida and cumin seeds.
  • Now add all the boiled gram and beans and fry them lightly.
  • Add red chilli, turmeric, coriander powder, dry mango powder, oregano and salt and mix well.
  • Now take it out in a plate.
  • Add chopped onion, green chilli and lemon juice and serve.

Material

  • 2 cups sprouted gram
  • 2 boiled potatoes

  • 8-10 golgappas
  • 1 cup boiled black gram
