
I finally found a way to make healthy salmon feel like a treat.
I was vegetarian for 21 years, and when I started eating meat and fish again, it was a tricky transition. I warmed immediately to shrimp scampi, grilled chicken and oysters on the half shell, but salmon? I would eat it, knowing it was good for me—packed with protein, Omega-3 fatty acids and antioxidants—but I didn’t enjoy it. Not until I started air-frying it in Our Place’s Wonder Oven Pro.

My devotion to the Wonder Oven Pro was a surprise, considering that I was an air-fryer skeptic for years. This air fryer toaster oven, however, has eight distinct functions: It can bake, roast, toast, proof, dehydrate, air-fry and reheat. Over the past several months, I’ve tried them all to great effect, toasting sourdough, baking muffins, proofing babka, roasting cauliflower and more. An intuitive touchscreen controls all of the cooking modes: Simply select a mode, set a temperature and start the timer.
Part of my reluctance to cook salmon was that I found it palatable only if I broiled it in the oven, which transformed my apartment into a boiler room. But the Wonder Oven Pro is compact, despite its 30-liter capacity, and preheats quickly without heating up my entire kitchen. If I toss in cubed salmon or fillets coated in a dry rub of spice and a hint of cornstarch, the fish comes out crisp on the outside and meltingly tender on the inside. It’s downright craveable. And because the air fryer circulates heat so effectively, my fish is done in eight minutes flat. My conventional oven took twice the time.
One of the reasons I was convinced to try the Wonder Oven Pro is that it was designed in partnership with Kenji López-Altwhom I revere for his scientific approach to cooking. I was thrilled to find that the air fryer lived up to his promises: Reheated fried chicken is just as crispy as it was the day it was cooked, and even toast is a transcendent experience. Thanks to the air fryer’s Steam Infusion tech—perhaps its most underrated feature—bread comes out inexplicably moist and gorgeously golden-brown.
While the Wonder Oven Pro is made with a few plastic pieces, none of them directly touch food—it’s reserved for exterior elements, such as the dial that controls the touchscreen and the steam port cap. All of the interior accessories, like the air fryer tray, cooking tiers and baking sheet, are made without plastic or forever chemicals, composed instead of stainless steel and ceramic nonstick.
You could certainly opt for the standard Wonder Ovenwhich is less expensive, but it’s also less capable. It offers fewer cooking modes, and it’s significantly smaller. This may not be a dealbreaker for cooking a couple of pieces of salmon, but I love that I can fit an entire chicken in the Wonder Oven Pro without overheating my apartment. And with the Pro, there’s an air fryer for every style. Kenji’s signature pistachio shade is sold out, but I opted for the inky black model, which looks elegant in my kitchen—and is more affordable than the stainless steel model.
