chainshu
Chainshu of Uttarakhand is a Kumaoni and Garhwali recipe, which is made in the traditional way. This is a variety of dal, which is made from black urad dal. Coarse powder is made from pulses by roasting them on low flame. This powder is then cooked with some local spices. Cumin, fenugreek and asafoetida are also used in it.

Pahari Dham
Himachali Dham is prepared by special Brahmin cooks, known as Botis. Pahari Dham is a full course meal, which is served on special occasions. It consists of many dishes like dal, rajma madra, kadhi, rice and local sweets, which are prepared in earthen pots, without onion-garlic. It is a feast served on happy occasions, festivals or weddings.
