Material
- 500 grams amla
- 3 tablespoons of mustard
- 2 tablespoons fenugreek seeds
- 2 tsp turmeric
- 2 tbsp red chillies
- 3 tbsp salt (to taste)
- 1/2 cup oil (plain or refined)
- 1 tsp asafoetida

- First wash amla and steam it in cooker till 1 whistle.
- After cooling, separate their pods and remove the seeds.
- Roast fenugreek seeds and mustard seeds in a pan on low flame. After it cools down, spread it thickly.
- In a large bowl add amla pods, turmeric, red chillies, salt and prepared masala and mix well.
- Heat oil in a pan, add asafoetida and pour this hot oil over the amla mixture. Mix everything well and let it cool.
- Keep the prepared pickle in a clean and dry jar.
- After 2-3 days, the pickle is ready to eat when the masalas are well seasoned.
