2 liter milk
½ cup cashew nuts
150 grams jaggery
1 tsp cardamom powder
1 tsp saffron

If you want to make sugar free Matka Malai Kulfi at home, then first pour milk in a heavy bottom pan and boil it on low flame. After boiling, reduce the flame and cook the milk for 15 to 20 minutes until it thickens and reduces to half. Keep stirring occasionally so that it does not stick to the bottom. Now add cardamom powder, jaggery, saffron and cream to it. Cook it until it dissolves completely. If you are making instant then you can add ground bread or 1 spoon of cornflour, this will prevent ice crystals from forming in the kulfi. Then turn off the gas and let the mixture cool completely at room temperature. Now pour this prepared rabri into small pots. Add chopped dry fruits on top. Cover the pot with foil or lid and keep it in the freezer for 7 to 8 hours or overnight. Your cool kulfi is ready.
