After this, add finely chopped onion, carrot or available vegetables, green chillies and coriander. Add red chillies, cumin seeds, chaat masala and salt and mix all the ingredients well. If the mixture seems thin, you can add some bread crumbs or semolina. Now grease your hands with a little oil and make small balls of the mixture and gently shape them into cutlets. After this, heat the tawa and leave some oil on it. Place the prepared cutlets on a pan and shallow fry until golden and crispy on both sides. Serve ready roti cutlets with hot chutney, tomato sauce or curd.
Little tips
If you want the cutlets crispier, apply a light layer of semolina or bread crumbs on the outside. You can also add peas, beets or cabbage to the vegetables as per your choice.
