Tezzbuzz Desk- If you feel like eating something light, tasty and spicy with evening tea, then Dhokla is a great option. This famous dish of Gujarat is liked for its sweet and sour taste and soft texture. If you think that making Dhokla at home is difficult, then it is not at all so. You can prepare soft and spongy Dhokla at home by following some easy steps.
Instead of buying Dhokla from the market, it is much easier to make it at home. For this you will need gram flour, semolina, curd and some common spices. At the same time, to enhance the taste, seasoning of mustard seeds, curry leaves and green chillies is applied on top. So let us know the easy recipe of making Dhokla at home..
Ingredients for making Dhokla
for batter
- 1.5 cups gram flour
- 1 tablespoon semolina
- 1/2 cup curd
- 1 tsp ginger-green chilli paste
- 1/4 tsp turmeric powder
- 1 tsp sugar
- salt as per taste
- 1 tsp eno or baking soda
- 1 tablespoon lemon juice
- water as per need
for tempering
- 1-2 teaspoon oil
- 1 tsp mustard
- 8-10 curry leaves
- 3-4 green chillies
- 1 tsp sugar
- about 1/2 cup water
- finely chopped coriander
First prepare the Dhokla batter
In a large vessel, add gram flour, semolina, curd, salt, sugar, turmeric and ginger-green chilli paste. Mix everything well. Now prepare a smooth batter by adding water little by little. Keep in mind that the batter should not be too thick or thin. Keep the batter covered for about 10 to 15 minutes. This will set the semolina and gram flour well and the texture of the dhokla will improve.
Cook Dhokla like this
Now add 2 to 3 cups of water in a big vessel or steamer and heat it. Grease the tray or tin in which you want to make Dhokla by applying some oil.
When the water starts boiling well, add lemon juice and eno to the batter. Add one spoon of water over it and immediately beat the batter well in one direction. After adding eno, do not keep the batter for long, rather pour it into the tray immediately.
Put the batter in an oiled tray, place it in the steamer and cover it. Steam it on medium to high flame for about 15-20 minutes.
After about 15 minutes, check the dhokla by inserting a knife or toothpick. If it comes out clean, then understand that the dhokla has been cooked well. Take out the tray and let it cool for some time.
Enhance taste with seasoning
Now heat oil in a small pan. Add mustard seeds, curry leaves and chopped green chillies to it. When mustard seeds start crackling, add about half a cup of water and one spoon of sugar. After the mixture comes to a boil, turn off the gas. Cut the cooled dhokla into desired shapes and pour the prepared tadka over it. Finally garnish with finely chopped coriander. Serve hot dhokla with green chutney. This dhokla with sweet and sour taste and spongy texture can be a delicious snack with evening tea.
