Ingredients for making Rasmalai

For chhena and rasmalai

  • 6-7 cups full cream milk
  • 2 cups sugar
  • 3-5 grams lemon or other sour substance
  • ½ tsp cornflour
  • ½ tsp flour
  • a few strands of saffron
  • pistachio
  • Almond

for syrup

  • equal quantity of water and sugar
  • Reetha water as per requirement

First prepare Chhena

To make Rasmalai, first boil milk in a thick bottomed vessel. Keep stirring the milk occasionally, so that it does not stick to the bottom of the vessel.

Once the milk boils well, turn off the gas and let it cool down a little. Now slowly add lemon juice to it and stir the milk. After some time the milk will curdle and the curd will start separating.

Now add some cold water to it and filter the prepared chenna through a muslin cloth. Tie the cloth and drain off the excess water thoroughly.

Make rasmalai balls using chenna

Add cornflour and flour to the chenna and mix well. Mash it until the mixture becomes smooth and soft. Now take small portions of it, give it a round shape and flatten it gently. Keep in mind that the balls should not be too thick, because their size will increase after cooking.

prepare sweet syrup

Put water and sugar in equal quantity in a big vessel and boil it on high flame. After the syrup boils, add reetha water to it. Now carefully put the prepared Rasmalai balls in the syrup. Cover the vessel and let them cook thoroughly. When the balls start rising, press them lightly, so that they can absorb the syrup properly.

Now prepare creamy milk

Heat milk in a separate vessel. There is no need to boil it too much. Put some strands of saffron in it and leave it for some time. With this, the color and aroma of saffron will dissolve well in the milk. Slowly take out the Rasmalai cooked in the syrup and put it in the saffron milk. Let the Rasmalai remain in the milk for some time, so that it can absorb the flavor of the creamy milk properly.

Garnish with pistachios and almonds

Now garnish the prepared Rasmalai with finely chopped pistachios and almonds. If you want, you can also add some rabri on top to make it more rich. Serve the Rasmalai after cooling it in the refrigerator for a few hours. The whole family will definitely like the taste of cold and creamy Rasmalai on the occasion of Rakshabandhan.
