Material
- Sabudana-1 cup
- Boiled potatoes – 2 medium sized
- Peanuts – ½ cup roasted and coarsely ground
- Green chilli-1-2 finely chopped
- Cumin-1 tsp
- Rock salt-½ tsp
- Lemon juice-1 tsp
- Green Coriander – 2 tbsp finely chopped
- Oil or Desi Ghee – 1 teaspoon
- water as per need
Method
1. Wash the sago thoroughly and add enough water to submerge it slightly. Soak it for 4–5 hours or overnight. Once the sago becomes soft, drain off the excess water.
2- Add mashed boiled potatoes, crushed peanuts, green chillies, cumin seeds, rock salt, lemon juice and green coriander to the soaked sago.
3-Mix all the ingredients by hand and prepare a mixture that binds easily. If the mixture seems too dry, add some water.
4-Heat the appam pan on medium flame and apply a little oil or desi ghee in each dish. Make small balls of the prepared mixture and place them in the wells of the appam pan. Apply light oil or ghee on top.
5-Cover the appas and cook for a few minutes. When the bottom surface becomes golden and crisp, turn them.
Cook on the other side until golden and crisp. If needed, you can add very little oil.
6- Take out the sago appe hot and serve it with green chutney, curd or peanut chutney. After soaking the sago, do not leave too much water in it. If there is too much water, the appe will not set easily in the pan and may break.
