Lifestyle Desk – In the month of Sawan, different fruit items start being prepared for fasting in all our homes. Sabudana Khichdi, Sabudana Vada and Sabudana Kheer are the most liked among them, but while eating the same things every Monday or during fast, many times one starts feeling like eating something new and tasty. In such a situation, Sabudana Rasmalai can bring a fun change in your fasting menu. When small soft balls prepared from sago are cooked in condensed milk flavored with cardamom and saffron, its taste becomes quite creamy and rich. When almonds, cashews and pistachios are added on top, it looks no less than a royal sweet. Let us know its simple recipe.
Material
Sabudana-1 cup
Full cream milk-1 liter
Sugar-3-4 tbsp
Saffron strands-5-6
Cardamom-3-4
Cashew – 1 tablespoon
Almonds-1 tablespoon
Pistachios-1 tablespoon
Ghee-1 tsp
Rock salt, if allowed during your fast

Method
- First of all, wash the sago thoroughly and soak it for about 4-5 hours. Keep in mind that the sago should become soft instead of completely melting.
- Now drain out the excess water and leave the sago for some time. After this mash the sago lightly.
- The mixture can be prepared by adding a little rock salt and as per requirement a little boiled potato or any binding ingredient used in fasting. Now apply light ghee on your hands and make small round balls of this mixture.
- Now pour milk in a heavy bottomed vessel and boil it. Add saffron strands and crushed cardamom to milk. Cook the milk on low flame until it becomes slightly thick.
- Now add sugar to it and mix well. Slowly drop the prepared sago balls into the milk. Cook them on low flame for a few minutes. Turn off the gas once the balls become soft and the flavor of the milk gets absorbed well. Keep in mind that do not cook the balls on very high flame, otherwise they may break.
- Now take out the prepared Sabudana Rasmalai in a serving bowl. Add finely chopped almonds, cashews and pistachios on top. If you wish, you can also add some saffron strands on top. It can be served lukewarm or chilled in the refrigerator.
