One of my 2026 goals is to stop buying lunch at work. The meals I typically purchase leave me unsatisfied, and I’d rather spend that money elsewhere. While searching for a rotation of simple, nutrient-dense recipes to replace my cafeteria lunches, I found a favorite: the Black Bean–Quinoa Bowl.

Thanks to its balance of protein, healthy fats and complex carbohydrates, this bowl keeps me satisfied throughout the workday. Plus, it takes just 10 minutes to make, requires little to no cooking and is packed with essential nutrients.

It’s Packed with Underconsumed Nutrients

Beyond providing 20 grams of protein per serving, this bowl delivers several nutrients that many Americans don’t get enough of. One serving provides about one-third of the Daily Value for magnesium, which is essential for healthy bones and supports normal muscle, nerve and neurological function. It also provides about one-quarter of the DV for potassium, a mineral that’s crucial for heart health, especially healthy blood pressure.

Because I don’t eat red meat often, I appreciate that this recipe also provides more than one-third of the DV for iron, with 7 milligrams per serving. The black beans and quinoa are both good sources of non-heme (plant-based) iron.

The combination of avocado, quinoa and black beans also packs an impressive 20 grams of fiber per bowl. I typically aim for at least 30 grams of fiber each day, so this lunch alone gets me about two-thirds of the way to my goal. Just be sure to drink plenty of water throughout the day if you don’t eat much fiber, since increasing your intake without enough fluids can contribute to constipation.

It’s Easy to Assemble

On office days, I want a lunch I can effortlessly throw together the night before or quickly assemble in the morning. This bowl takes less than 10 minutes to prepare, and I make it virtually no-cook by using frozen precooked quinoa that I heat in the microwave. Then I simply add the beans, pico de gallo, avocado and cilantro. If I am feeling especially lazy, I skip chopping the cilantro and use the leaves whole. To save even more time, I make a quadruple batch of the hummus dressing and store it in a small jar to use throughout the week.

I also enjoy this bowl cold, making it easy to eat when I am away from my kitchen. But if you prefer it warm, pack the pico de gallo, avocado and hummus dressing separately and add them after reheating the bean and quinoa mixture.

When I want a little variety, I’ll add leftover chicken or roasted vegetables. I’ve also swapped the pico de gallo for homemade mango salsa, which adds a fresh, slightly sweeter flavor and even more fiber.

It’s Budget-Friendly

Budget-friendly ingredients make this bowl ideal for a weekday lunch. It relies on pantry staples like quinoa and canned black beans, along with produce that keeps well in my refrigerator for several days. Even with fresh avocado, it costs far less than the roughly $12 a day I used to spend at the office cafeteria.

Making lunch at home has saved me money while giving me meals I enjoy more and that are also more nutritious than the ones I’d buy at work.
