Ingredients for making arbi leaves pakodas
- 10 large taro leaves
- 2 cups gram flour
- 2 tbsp rice flour
- 1 tsp turmeric powder
- 1 tsp red chilli powder
- 1 tsp coriander powder
- half teaspoon cumin powder
- 1 tsp celery
- 2 tsp dry mango powder
- 1 tsp jaggery
- salt as per taste
- water as per need
- some oil for baking
Prepare spicy solution like this
First of all, add gram flour, rice flour, turmeric, red chilli, coriander powder, cumin powder, celery, dry mango powder, jaggery and salt in a big vessel. Now prepare a thick and smooth solution by adding little water to it. Take care that there are no lumps in the solution.
Apply spice mixture on leaves
Wash and clean taro leaves thoroughly and dry them. If the stalk of the leaves is too thick then cut it lightly and make it thin, which will make it easier to make the roll. Now spread a leaf and apply the gram flour mixture thoroughly on it. Place another leaf on top of it and then apply gram flour paste. Similarly, prepare a layer of several leaves and fold the edges and roll it tightly.
Gives crispy taste by steaming
Steam the prepared rolls in a steamer or idli cooker for about 20 to 25 minutes. After cooking, let it cool and then cut it into round shapes. Now add some oil on the pan and fry the cut patas till they become golden and crisp from both the sides. This will enhance their taste even more.
Serve with chutney and tea
Hot arbi leaves patodas can be served with green coriander chutney, sweet tamarind chutney or tomato chutney. Its taste becomes even more special with hot tea during the rainy season.
Patodas made of taro leaves are not just a snack but are a symbol of Indian traditional taste. Prepared with simple ingredients and a little effort, this dish can be a great option for family and guests during rainy days.
