Tezzbuzz Desk- As soon as the month of Sawan arrives, the demand for Ghevar increases in sweet shops. Everyone likes Ghevar due to its special latticed texture, light crispness and delicious sweetness. There is a tradition of eating it especially during the festivals of Sawan.
If you also want to make Ghevar at home instead of buying it from the market, then it is quite easy. With the help of the right ingredients and some easy tips, you can prepare delicious and perfect ghevar at home.
Ingredients required to make Ghevar
- 2 cups flour
- half cup ghee
- 4-5 ice cubes
- 2 to 2½ cups cold water
- 1 cup cold milk
- 1 pinch baking powder
- 1 liter ghee or refined oil (for frying)

Ingredients for making sugar syrup
- 1½ cups sugar
- 1 cup water
- 4-5 cardamoms
- some saffron threads
Easy method of making ghevar at home
- First of all, put ghee and ice cubes in a big vessel and beat it well. When the ghee starts appearing light and creamy, then slowly add flour to it.
- Now prepare a thin batter by adding cold water and milk to this mixture. Make sure that there are no lumps in the batter and its consistency is so thin that it can flow easily.
- After this, heat ghee or oil in a deep and thick bottomed vessel. When the oil is well heated, pour the batter into the oil from a little height with the help of a ladle.
- Keep adding batter little by little every 10 to 15 seconds. After doing this 5-6 times, the mesh layer of ghevar will start getting ready. Make a small hole in the middle with the help of a spoon, so that the ghevar can cook properly from inside.
- When the ghevar becomes golden and crisp, carefully remove it from the oil.
Prepare ghevar syrup like this
To make syrup, add water and sugar in a pan and heat it. Cook it until one string syrup is ready. After this, add cardamom and saffron to enhance the taste. Lightly dip the ghevar in the prepared syrup and pour some syrup on top.
Decorate in the last step
After ghevar is ready, pour rabri over it. Then decorate it with chopped almonds, pistachios and silver work. Ghevar served chilled tastes even better. On the occasion of Sawan, you can make this traditional sweet at home and enjoy it with your family.
Keep these things in mind while making Ghevar
Add rabri and dry fruits just before serving, so that the taste and freshness is maintained. Always keep the batter thin, only then Ghevar will have a mesh texture. Oil or ghee should be well heated. While pouring the batter, keep some height, this makes the layers of Ghevar better.
