Dahi Ke Sholay is a very popular starter in North Indian food culture. This dish, which is a must-order in restaurants, can now be easily prepared at home. Material
- 2 cups thick strained curd (hung curd)
- 1/2 cup grated paneer
- 2 green chillies finely chopped
- 2 tbsp finely chopped coriander
- 1/2 tsp roasted cumin seeds
- 1/4 tsp black pepper powder
- 1/2 tsp chaat masala
- Salt to taste
- 8 bread slices
- 2 tablespoons of flour
- Water as needed
- Oil for frying

- In a large bowl add hung curd, grated paneer, green chillies, coriander, cumin, black pepper, chaat masala and salt and mix well until all the ingredients are combined.
- Remove the edges of the bread slices. Moisten each slice lightly with water and press apart with both hands to remove excess water.
- Place the curd mixture in the center of the moist bread. Form a long or cylinder shaped roll by closing the edges of the bread properly. Be careful that the saran does not come out.
- Mix the flour and a little water to make a thick batter without lumps. If necessary, seal the edges of the prepared roll with this mixture.
- Heat oil in a pan. Fry the prepared rolls on medium heat until golden and crispy on all sides.
- After frying put it on a tissue paper to remove excess oil.
- Cut diagonally from dahi ke sholay and garnish on a plate. Sprinkle some chaat masala and mint chutney on top,
- Serve hot with green chutney or tomato sauce.

- Always use tightly strained curd, so the curd does not loosen.
- You can add grated cheese or finely chopped red chillies to the saran to make it tastier.
