Ingredients to make Aloo Tuk:
8-10 small raw potatoes, oil for frying, half teaspoon turmeric, 1 teaspoon red chili powder, 1 teaspoon cumin powder, 1 teaspoon dry mango powder, 1 teaspoon coriander powder, a pinch of black pepper, salt as per taste.
How to make Aloo Tuk?
Peel raw potatoes and wash them with water. Then cut the potatoes in half. If the potatoes are large, cut them into four pieces. Wash the potatoes and soak them in water for 5-10 minutes and also add a pinch of salt to the water. After soaking, drain the potatoes and wash them thoroughly with water. Then wipe the potatoes dry with a cotton cloth.
Heat oil for frying in a pan and add a pinch of salt. Then deep fry the potatoes in hot oil for 2 minutes so that a layer is formed on them. After this, reduce the flame to low or medium-low and continue deep frying for 8-10 minutes. Fry the potatoes until almost cooked. To check, insert a toothpick, if it goes in easily then the potatoes are cooked, otherwise fry for a few more minutes. By then their color will become light golden brown.
Take out the potatoes on oil-absorbing paper and let them cool slightly. Take a bowl and press the potatoes gently so that they remain attached and do not break while frying the second time. If you want to press by hand, wait for the potatoes to cool. When all the potatoes are pressed, heat the oil on high flame and fry the pressed potatoes on high flame until they become crisp and golden brown.
Now take them out on oil absorbent paper and keep them aside. Place a pan on medium flame, add 1 teaspoon oil and turmeric powder in it. Fry the turmeric for a few seconds to remove its rawness. After this add red chili powder, cumin powder, dry mango powder, coriander powder, and salt and black pepper as per taste. Lastly add the crispy fried potatoes and mix well so that the spices coat them well.
Aloo tuk is ready to serve. Serve them immediately and keep a slice of lemon along with it to add a little more sourness. If you want to make Aloo Tuk more spicy, you can increase the amount of red chili powder.
