What is required to make Roasted Mango Chutney?
For this recipe take about 4 medium sized raw mangoes. Apart from this, cumin, fennel, whole coriander, fenugreek seeds, black pepper, sugar, Kashmiri red chilli, turmeric, black salt and common salt will be required.

First of all, wash and dry the raw mangoes thoroughly. Now place the grate on the gas and fry the mangoes directly on the flame. Roasting gives a light smoky flavor to the mango, which makes the taste of the chutney even more delicious.
When the mango peel starts turning black and starts cracking slightly, then understand that the mangoes have been roasted properly.

Prepare smooth pulp of roasted mango
Let the roasted mangoes cool for some time. After this, peel them and separate the pulp. Now put this pulp in the mixer and prepare a soft paste.

In a pan add cumin, fennel, whole coriander, some fenugreek and black pepper Add it and fry it lightly. When the spices start smelling, cool them and grind them in the mixer. This masala will give special taste to the chutney.

Now put the prepared mango paste in a pan and add a little more than half a cup of sugar in it. After this add Kashmiri red chilli powder, turmeric, prepared masala, black salt and common salt as per taste.

Mix all the ingredients well and cook on low flame. You can add some water as per need. Cook the mixture until the water evaporates completely and the chutney becomes thick.

When the chutney is completely cooked, let it cool. After this, fill it in a clean and dry glass jar and keep it in the refrigerator. If stored properly, this chutney does not spoil for about 6 months and its taste also remains intact.
