Ingredients required to make Thekua
- Two cups of wheat flour
- Three-quarters to one cup of jaggery
- Two tablespoons of ghee
- Half a cup of grated coconut
- 4 to 5 cardamoms
- Chopped cashews and almonds as desired

How to make Thekua
To make thekua, first break the jaggery into small pieces, heat it in a little water, and let it dissolve completely. Then, strain the mixture to remove any impurities. Add ghee to the mixture and let it cool slightly. Then, place wheat flour in a large bowl and mix in grated coconut, cardamom powder, and dried fruits. Using the prepared jaggery ball, knead a stiff dough. Keep in mind that thekua dough is slightly stiffer than regular roti dough. Once the dough is ready, form small balls. Shape them with your hands or use a mold to create designs. If you don't have a mold, you can use a sieve, grater, or any other designed utensil.
Fry on a low flame
Now, heat oil or ghee in a pan to fry the thekua. When the oil is hot on medium heat, add the prepared thekua and fry over medium heat until golden. Avoid using high heat to quickly fry the thekua, as this can leave it uncooked inside. Once golden, remove the thekua and let it cool. Once completely cooled, it can be stored in an airtight container. This will keep it piping hot for several days and preserve its flavor.
