Material

For the vegetables:

  • 3 potatoes boiled and mashed
  • 1 cup florets finely chopped
  • 1/2 cup green peas
  • 1 carrot finely chopped
  • 1 coarse chili finely chopped
  • 2 onions finely chopped
  • 3 tomatoes finely chopped
  • 2 tablespoons of butter
  • 2 tsp pavbhaji masala
  • 1 tsp red chillies
  • 1/2 tsp turmeric
  • Salt to taste
  • 2 tablespoons of coriander
  • Water as needed

  • Cook cauliflower, peas and carrots in little water. After cooking, mash it with potatoes and keep aside.
  • Heat butter in a pan and add chopped onion. When onion turns light golden, add coarse chillies and cook for 2-3 minutes.
  • Now add tomatoes and saute until they are completely soft. Then add turmeric, red chillies and pavbhaji masala.
  • Add the mashed vegetables to the prepared masala. Mix all the mixture well.
  • Add water as required to give desired firmness to the vegetable. Add salt and cook on low flame for 10-15 minutes.
  • After the vegetables are cooked, add some butter and coriander on top and mix well.
  • Heat butter in a pan and grind some pavbhaji masala in it. Cut the bread and fry it lightly on both sides until crispy. Serve hot with vegetables, garnished with onion, lemon and a dollop of butter.
  • If you want the pavbhaji to taste more restaurant-like, add a little extra butter and a spoonful of pavbhaji masala at the end and boil the vegetables for a few minutes. This makes the vegetables more aromatic and tasty.
