Today we are going to tell you about a pasta whose taste is creamy, but cream and cheese are not used in it at all. The use of ridge gourd in pasta makes it tasty as well as nutritious. This pasta recipe is also perfect for those children who like pasta but are reluctant to eat ridge gourd.

Ingredients to make Zucchini pasta

  • 2 medium sized ridge gourd
  • 2 spoons desi ghee
  • 1 large onion
  • 3-4 tomatoes
  • 100 grams makhana
  • 50 grams cashews
  • 100 grams cheese
  • black pepper 1 tsp
  • 1 teaspoon mixed herbs
  • 250 grams pasta
  • salt to taste

Zucchini pasta recipe

  • To make ridge gourd pasta, first wash the ridge gourd thoroughly, peel it and cut it into small pieces. Also cut the tomatoes into big pieces and keep them aside.
  • Now heat one spoon of desi ghee in a pan. Add onion, tomato, ridge gourd, makhana and cashew nuts in it. Add some water, cover and cook until everything becomes soft. After it is completely cooked, remove it from the gas and cool it.
  • On the other hand, put water and salt in another vessel and boil it. Will add pasta to it once it recovers. When the pasta becomes soft, drain the water and keep it aside. Keeping health in mind, instead of normal pasta, multigrain pasta or flour based pasta can also be taken.
  • On the other hand, when the vegetable mixture cools down, we will blend it in the mixer. Add cheese to it and grind it well to prepare a soft and creamy paste. Now with this paste we will prepare creamy gravy for pasta.
  • Now heat the remaining ghee in a pan and add the prepared paste into it. Cook it for a few minutes. If the gravy seems too thick then you can add some water.
  • After this, add boiled pasta, salt, black pepper and mixed herbs to this creamy thick mixture and mix well. After cooking for two to three minutes, ridge gourd pasta is ready.
