Mrs. Mo’s pho noodle soup restaurant announced on its official Facebook page on June 3 that it temporarily suspended operations as it prepares for a new chapter.
The restaurant said it plans to use the break to “elevate the pho experience” through deeper research into products, recipes and the stories behind Vietnamese cuisine.
The announcement came just one day before Michelin officially recognized the restaurant in its Bib Gourmand category, which highlights establishments offering high-quality food at reasonable prices.
This year, Michelin added 11 new restaurants to its Bib Gourmand selection in Vietnam, including five in Ho Chi Minh City.
Mrs. Mo’s opened in 2025 to serve a range of Vietnamese dishes, including beef pho, good cha rice vermicelli with grilled pork, pho rolls, La Vong-style grilled fish and banh xeo sizzling pancakes.
According to the restaurant, its pho is prepared with broths simmered for extended periods to develop their flavor naturally.
A total of 195 establishments across Hanoi, Da Nang and Ho Chi Minh City were recognized by the Michelin Guide in various categories this year, including two Michelin-starred restaurants.
Michelin inspectors evaluate restaurants based on five criteria: the quality of ingredients, mastery of cooking techniques, harmony of flavors, the chef’s personality as expressed through the cuisine, and consistency across the menu and over time.
In Michelin’s rating system, one star denotes a very good restaurant, two stars indicate excellent cooking worth a detour, and three stars signify exceptional cuisine worth a special journey.
Vietnam now has 11 one-Michelin-star restaurants.
