How to make Watermelon Barfi
To make barfi, first wash the watermelon and peel it. Then cut it and take out its pulp and then grind the watermelon pieces in a mixer to make a fine paste. Now filter it, so that the fibers get separated. After this, mix cornflour in watermelon juice and beat it well. After this, turn on the gas and put ghee in the pan and keep it to heat. After the ghee is heated, add the watermelon pulp and cook on medium flame until it dries. After this, when the mixture becomes thick, add milk powder or mawa to it and mix.
If you want, you can also add food color to it to give it the perfect watermelon color. Now cook the mixture until it starts leaving the sides of the pan. Finally add cardamom powder and some ghee.
Grease a plate or tray with ghee. Spread the prepared mixture in a tray and sprinkle chopped pistachios and almonds on top. Then leave it to set in the refrigerator for 2-3 hours. After taking it out from the fridge, cut it into barfi shapes with a knife. Your unique and tasty barfi is ready.
