This fruit is a favorite fruit of many people due to its sweetness and abundant amount of water. People usually cut watermelon with black salt and make juice and drink it, but have you ever tried its sweets? Watermelon barfi is such a recipe, which tastes amazing. This summer, if you want to feed something different and surprising to your guests, then definitely make watermelon barfi once. Let us know how to make it.

Material

Watermelon pulp-3 cups (remove seeds)
Milk-1 cup
Mawa/Khoya-1 cup
Sugar-1/2 cup
Coconut powder-1/2 cup
Ghee-2 tbsp
Cardamom powder- 1/4 tsp
Chopped pistachios and almonds to garnish

Method

  1. First of all, cut the watermelon pulp into small pieces and grind it in a mixer. Then filter it through a strainer so that excess water gets removed.
  2. Put watermelon pulp in a pan and cook on medium flame. When its water starts drying up to a great extent, then add sugar in it.
  3. Now add mawa and milk to the mixture and keep stirring continuously so that lumps do not form. When the mixture starts thickening, add coconut powder, cardamom powder and ghee. Cook it until the mixture starts leaving the pan.
  4. Apply ghee on a plate or tray and spread the mixture. Add pistachios and almonds on top. Keep it in the refrigerator for 1–2 hours. After it sets, cut it into desired shapes.
  5. Serve cold watermelon barfi as a summer dessert. Both children and adults will like its taste.
