Onigirazu, often called the “sushi sandwich,” is a modern Japanese dish that combines all the flavors of sushi into a simple handheld meal. Unlike traditional sushi rolls, Onigirazu uses an easy folding method that wraps rice, vegetables and flavorful fillings inside a sheet of nori seaweed, creating a neat sandwich-style shape that is both convenient and visually appealing.
One of the reasons Onigirazu has become so popular is because it delivers the taste of sushi without requiring advanced rolling skills. The sandwich can be customized with endless fillings, but one of the most loved versions includes spicy tuna salad, crunchy vegetables and seasoned sushi rice layered together for a fresh, satisfying bite.
To make the spicy tuna filling, canned tuna or fresh sushi-grade tuna is mixed with mayonnaise, sriracha sauce, soy sauce and a little sesame oil for extra flavor. Thinly sliced cucumber, avocado, carrots or lettuce are often added to provide freshness and crunch that balance the creamy tuna mixture beautifully.
The sushi rice is another key part of the recipe. Freshly cooked short-grain rice is seasoned lightly with rice vinegar, sugar and salt to create the classic sushi flavor. Slightly warm rice also helps the nori wrap soften properly during folding.
To assemble the Onigirazu, place a sheet of nori on a flat surface like a diamond shape. Spread a layer of rice in the center, then stack the spicy tuna salad and vegetables on top. Add another thin layer of rice before carefully folding the corners of the nori inward to seal everything together like a parcel.
After resting for a few minutes, the nori softens and holds the sandwich firmly in place. The Onigirazu can then be sliced in half, revealing colorful layers of rice, tuna and vegetables inside.
One of the biggest advantages of Onigirazu is its versatility. Fillings can include grilled chicken, teriyaki beef, egg omelets, tofu or fresh seafood, making it suitable for many different tastes and dietary preferences. It is also easy to pack for lunch boxes, picnics or quick meals.
The combination of soft rice, crisp vegetables, creamy spicy tuna and savory seaweed creates a balanced texture and flavor that feels fresh, filling and satisfying at the same time.
Whether enjoyed as a quick lunch, snack or light dinner, Onigirazu offers a creative and approachable way to enjoy sushi-inspired flavors in a simple handheld form that works perfectly for home kitchens.
