Lifestyle Desk – During the summer season, very good litchi is available in the market and it tastes very tasty and juicy. Litchi is full of many properties. It is rich in Vitamin C and antioxidants. Litchi is the favorite fruit of many people. Litchi is a sweet and juicy fruit. Kheer can also be prepared from it, which you might have never tried before. But it really looks very tasty. So let us know the recipe of making delicious litchi kheer on the gourd.
Material
Full cream milk-1 liter
Litchi-12–15 (peeled and seeded)
Sugar-3–4 tbsp
Basmati rice-2 tbsp (washed and soaked for 30 minutes)
Cardamom powder-1/2 tsp
Cashews-8–10 (chopped)
Almonds – 8–10 (chopped)
Pistachios – 1 tablespoon (chopped)
some saffron threads
Method
- Boil milk in a heavy bottomed vessel. Add soaked rice and cook on low flame. Keep stirring occasionally so that the milk does not stick to the bottom.
- When the rice gets cooked well and the kheer starts thickening, add sugar and cook for 3-4 more minutes.
- Turn off the gas and let the kheer cool completely. Cut litchi into small pieces or crush it slightly.
- Mix litchi, cardamom powder and dry fruits in the cooled kheer. If you wish, garnish with saffron and pistachios. Keep in the refrigerator to cool for 1–2 hours.
- Serve cold litchi kheer as dessert. Children and adults alike will love this unique combination of sweetness of litchi and creamy texture of milk.
tip
- Do not add litchi to hot kheer, as it may affect the taste and texture of litchi. Always add litchi only after the kheer cools down.
