Beef Plov with Chickpeas

Material
  • 500g beef (cut into cubes)
  • 2 cups basmati rice
  • 1 cup boiled chickpeas
  • 2 large carrots (cut lengthwise)
  • 2 onions (sliced)
  • 1 whole garlic clove
  • 4 tablespoons oil or ghee
  • 1 teaspoon cumin seeds
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • Salt to taste
  • 4 cups hot water

Method of preparation

  1. Wash the rice and soak it for 30 minutes.
  2. Heat oil in a heavy bottomed pan and fry the onions till golden brown.
  3. Now add the beef and brown it well over high heat.
  4. Add the carrots and cook for 5 minutes to bring out the sweetness.
  5. Add cumin, black pepper, paprika and salt.
  6. Add the chickpeas and pour hot water over them.
  7. Place a whole garlic clove in the center and cook on low heat for 20–25 minutes.
  8. Now spread the soaked rice over the top. Do not stir too much.
  9. Cover and cook on low heat until the rice becomes soft and fluffy.
  10. Mix gently before serving.
