- Lukewarm milk: 2 tablespoons
- Cashews: Finely chopped
- Almonds: Finely chopped
- Pistachios: Finely chopped
- Cardamom powder: 1/2 teaspoon
- Cornstarch: 1 teaspoon
- Cold milk: 2 tablespoons
**How to Make Thick and Creamy Rajbhog Kulfi**
**1. Bring the Milk to a Rolling Boil**
First, take a heavy-bottomed pan (or *kadhai*) and pour the full-cream milk into it. Cook the milk over high heat until it comes to a boil. As soon as the milk begins to boil, reduce the heat to a low flame.
**2. Simmer Until the Milk Reduces to Half**
Now, continue to cook the milk over a low flame, stirring continuously. It is essential to stir occasionally to prevent the milk from scorching at the bottom of the pan. Continuously scrape the layer of cream that accumulates along the sides of the pan and stir it back into the milk. This specific technique is what gives the kulfi its characteristic grainy texture, just like the kind found in the market. After approximately 20 to 25 minutes, the milk will reduce to half its original volume and appear significantly thickened.
3. Add Mawa and Sugar
Now, add the grated *mawa* (reduced milk solids) to the mixture; if *mawa* is unavailable, you may use milk powder as a substitute. Next, add sugar according to your taste preference and mix thoroughly. Continue to cook the mixture for about 5 minutes to ensure that all the ingredients dissolve completely into the milk.
4. Prepare the Mixture by Adding Flavorings
Now, pour in the milk infused with soaked saffron. Along with this, mix in the cardamom powder and chopped dry fruits. Reserve a small portion of the dry fruits for garnishing later. Dissolve the cornstarch in a little cold milk and slowly pour it into the mixture. Ensure you stir continuously to prevent the formation of lumps. This step will make the kulfi even creamier. After cooking for another 3 to 4 minutes, the mixture will become quite thick and smooth.
The Right Way to Set Kulfi
Now, turn off the heat and allow the mixture to cool down completely. Once cooled, pour the mixture into kulfi molds or paper cups. Sprinkle the reserved dry fruits over the top. Cover the molds with aluminum foil, make a small slit in the center, and insert a kulfi stick. This ensures the kulfi sets properly and prevents the formation of ice crystals. Finally, place the molds in a deep freezer for 7 to 8 hours, or preferably overnight, to set.

Once the kulfi has set completely, dip the mold into lukewarm water for a few seconds. This will allow the kulfi to slide out easily. Garnish with a sprinkle of pistachios or saffron and serve chilled. The taste is so exquisite that, after trying this homemade version, store-bought kulfi will seem lackluster in comparison.
