- 1/2 cup toor dal (arhar dal)
- 1/4 cup moong dal
- 1 onion (finely chopped)
- 2 tomatoes (chopped)
- 1-2 green chillies
- 1 tsp ginger-garlic paste
- 1/2 tsp turmeric powder
- 1 tsp red chilli powder
- 1 tsp coriander powder
- salt as per taste
- 2 tbsp ghee
- 1 tsp cumin
- 4-5 garlic cloves (chopped)
- 2 dried red chillies
- Green coriander (for garnish)
Method to make Dhaba Dal Tadka
boil lentils
First of all, wash toor and moong dal and put them in the cooker. Mix turmeric, salt and water in it and cook till 3-4 whistles. Mash the dal well, so that its texture becomes creamy.
prepare masala
Heat some oil or ghee in a pan. Add cumin seeds in it and let it crackle. Now add onion and fry until golden. After this add ginger-garlic paste and green chilli and cook for a few seconds.
Mix tomatoes and spices
Now add chopped tomatoes and cook until soft. Add red chilli and coriander powder to it and fry the spices well, until the oil starts separating.
Mix and cook lentils
Now add boiled lentils to this masala and mix well. Add water as per requirement and cook on low flame for 5-10 minutes, so that the flavor gets absorbed in the dal properly.
Apply Tadka (Dhaba Style)
Heat ghee in a small pan. Add chopped garlic, dry red chilli and fry till it turns golden. Pour this hot tempering on the dal and cover it immediately, so that the aroma remains inside. Garnish the prepared dal tadka with green coriander and serve it with hot roti, naan or rice.
