Lifestyle Desk- As soon as the summer season starts, the challenges in the kitchen also increase. Extreme heat and humidity not only affect people’s health but also affect the food items. Especially cooked things like pulses start spoiling very quickly. Many times the dal prepared in the morning starts turning sour by afternoon and by the evening it starts getting foamy or has a strange smell. In such a situation, along with food getting wasted, the risk to health also increases.
Actually, pulses have high amount of protein and moisture, due to which bacteria grow rapidly in it. But heat is not the only reason for this, but some of our small mistakes also spoil the pulses quickly. If correct methods are adopted then pulses can be kept fresh for a long time. Let us know about it in detail.
Why do pulses spoil quickly in summer?
According to experts, hot temperatures give bacteria a chance to grow rapidly. When lentils are left at room temperature for a long time, they start turning sour. Many people keep hot pulses covered, due to which the steam gets trapped inside and due to increase in moisture the pulses get spoiled quickly.
Easy tips to keep pulses fresh
Let the lentils cool completely
After making dal, do not make the mistake of keeping it in the refrigerator immediately. First let it cool to normal temperature. But keep in mind that do not keep the pulses outside for more than 1-2 hours.
Use steel or glass utensils
Keeping pulses in plastic containers can spoil their quality quickly. It would be better if you use an airtight container of steel or glass.
Avoid frequent heating
Many people heat whole dal again and again. By doing this the risk of bacteria growing in it increases. Take out as many pulses as you want and heat them separately.
refrigerate properly
Always keep the pulses covered in the refrigerator. If the weather is very hot, then the dal should be kept in the refrigerator within two hours of making it.
apply tempering later
If you want to store dal for a long time, then add tadka to it before eating. This keeps the pulses fresh for a longer time.
Identify bad pulses
If pulses smell sour, foam appears in it or taste changes, then avoid eating it. Eating spoiled pulses can cause food poisoning and stomach problems.
