Bananas make a fantastic snack when you're in need of an energy boost, but leave them too long and they'll turn soft and mushy. One brilliant way to make use of overripe bananas is to transform them into a delicious banana bread.
Baker, recipe developer and TikTok creator Jane Dunn, better known as Jane's Patisserie, has recently shared her own twist on the beloved classic. She also incorporates a secret ingredient to make the banana bread "utterly delicious", and it's something most of us already have sitting in our kitchen cupboards. Jane wrote in the video's caption: "A lovely moist banana bread studded with chocolate chips, ideal for using up any bananas that are on the turn!
"The soured cream is the perfect addition for creating a gorgeous texture to this bake, and the chocolate chips are optional, but they add a little extra treat to every slice!"
In the video, Jane said: "I know we all remember the banana bread craze of lockdown. But honestly, banana bread has been around for so long, and it is an ever-popular bake, and this Chocolate Chip Banana Bread is utterly delicious, incredibly easy to bake and always a hit with the crowds."
To introduce a hint of bittersweet indulgence, the baker folds in chocolate chips throughout the mixture. Meanwhile, incorporating soured cream into the batter ensures the finished loaf remains wonderfully moist throughout the baking process, reports The Mirror.
The baker addressed the use of soured cream on her website: "I used soured cream as I found it baked best with it - and four large ripe bananas worked best for me. Banana bread doesn't rise that much, so it will look like a lot of mix, but trust me, it works."
Jane chose dark chocolate, noting: "I went for dark chocolate because I love it." Jane's video has already clocked up more than 13,400 views, garnering 453 likes and six comments at the time of writing. One user wrote: "Can't beat a good banana bread."
Freckles added: "Ooh, I made chocolate chip banana bread a few days ago with melted, drizzled chocolate swirled into the top."
So if you're keen to find a wonderfully simple yet impressive twist on a classic banana bread, here's how to recreate Jane's recipe in your own kitchen.
Chocolate Chip Banana BreadIngredients
- Four ripe bananas (plus one for the top)
- 125g unsalted butter
- 150g light brown sugar
- 250g self-raising flour
- One tsp baking powder
- 1/2 tsp ground cinnamon
- Three medium eggs
- 75g soured cream
- One tsp vanilla extract
- 150g chocolate chips
Method
Preheat the oven to 180°C/160°C (fan) and line a 2lb loaf tin. Mash the bananas, setting aside one for decoration.
In a separate bowl, add the butter and sugar and beat together. Add the eggs, banana, soured cream and vanilla and beat once more.
Fold in the flour, baking powder and cinnamon and beat again. Stir the chocolate chips through the mixture, then pour into the tin.
Place a banana on top as decoration if desired.
Bake in the oven for 60 to 70 minutes. After 30 minutes, carefully cover loosely with foil to avoid over-browning. Once fully baked, allow to cool completely before serving.
