Ingredients required to make Khaman Dhokla

For Batter:

  • 1 cup gram flour
  • 1 tablespoon semolina
  • 1/4 cup curd
  • 3/4 cup water
  • 1 tsp eno fruit salt
  • 1 tsp lemon juice
  • 1 tsp ginger-green chilli paste
  • salt as per taste
  • A little oil to grease the plate

For tempering:

  • 2 tbsp oil
  • 1/2 tsp mustard
  • 1/2 tsp cumin
  • 1 tsp sesame seeds
  • 10–15 curry leaves
  • 3–4 green chillies (cut lengthwise)
  • 1 tablespoon sugar
  • 1/3 cup water
  • Coriander and coconut to garnish

How to make spongy dhokla at home

  • First of all, heat water in a steamer or a big vessel.
  • Grease a plate or plate with oil.
  • Now prepare a smooth batter by mixing gram flour, semolina, curd, water, lemon juice, ginger-chilli paste and salt in a bowl.
  • Take care that there are no lumps in the solution.
  • Now add Eno to it and mix gently – the batter will start rising immediately.
  • Immediately put this mixture in a plate and place it in a steamer.
  • Steam cook for 10–12 minutes. Insert a knife and check – if it comes out clean, the dhokla is ready.

Enhance taste by seasoning

  • Heat oil in a pan.
  • Add mustard seeds, cumin seeds, sesame seeds, curry leaves and green chillies and fry.
  • Now add water and sugar in it and let it boil.
  • Pour the prepared tadka over the dhokla.

serving method

Add green coriander and grated coconut on top and serve with green chutney. Soft, spongy and delicious Khaman Dhokla is ready.
