Ingredients required to make Khaman Dhokla
For Batter:
- 1 cup gram flour
- 1 tablespoon semolina
- 1/4 cup curd
- 3/4 cup water
- 1 tsp eno fruit salt
- 1 tsp lemon juice
- 1 tsp ginger-green chilli paste
- salt as per taste
- A little oil to grease the plate
For tempering:
- 2 tbsp oil
- 1/2 tsp mustard
- 1/2 tsp cumin
- 1 tsp sesame seeds
- 10–15 curry leaves
- 3–4 green chillies (cut lengthwise)
- 1 tablespoon sugar
- 1/3 cup water
- Coriander and coconut to garnish
How to make spongy dhokla at home
- First of all, heat water in a steamer or a big vessel.
- Grease a plate or plate with oil.
- Now prepare a smooth batter by mixing gram flour, semolina, curd, water, lemon juice, ginger-chilli paste and salt in a bowl.
- Take care that there are no lumps in the solution.
- Now add Eno to it and mix gently – the batter will start rising immediately.
- Immediately put this mixture in a plate and place it in a steamer.
- Steam cook for 10–12 minutes. Insert a knife and check – if it comes out clean, the dhokla is ready.
Enhance taste by seasoning
- Heat oil in a pan.
- Add mustard seeds, cumin seeds, sesame seeds, curry leaves and green chillies and fry.
- Now add water and sugar in it and let it boil.
- Pour the prepared tadka over the dhokla.

Add green coriander and grated coconut on top and serve with green chutney. Soft, spongy and delicious Khaman Dhokla is ready.
