  • ¼ tsp ground white pepper
  • 2 tbsp cornflour (dissolved in water)

  3. Add veg stock and water. Let it boil, then reduce the flame.

  4. Add white vinegar, green chili sauce, ground white pepper, salt and pepper, mix well.

  5. Add the dissolved cornflour slowly and stir continuously to avoid lumps. Cook the soup for 5-7 minutes or until it thickens.

  6. Pour the hot soup into bowls and serve garnished with chopped green onions.

Tips and Tricks:

  1. Variety in Vegetables: You can add any vegetables of your choice like mushrooms, broccoli, capsicum or beans. This will make the soup more nutritious and tasty.

  2. Choice of noodles: You can use any noodles of your choice, like egg noodles, rice noodles or whole wheat noodles. Don’t overcook the noodles, as they will become soggy in the soup.

  3. Enhance Flavor: You can enhance the flavor by adding some ginger paste or chopped coriander to the soup. You can also add some red chili flakes to make it a little spicy.

  4. Adjust thickness: If you like the soup thicker, you can add more cornflour. If you like it thinner, you can add a little more veg stock or water.

  5. Serving Method: Serve the soup with crispy noodles, toasted bread or your favorite chutney.
