Pasta and Broccoli Soup

  • 1½ cups pasta (boiled)
  • 1½ cups broccoli florets (blanched and cut into pieces)
  • ½ cup carrots (blanched and grated)
  • ½ cup green onions (chopped)
  • 1 tsp garlic (grated)
  • 6 cups vegetable stock
  • 1 packet veg sweet corn soup mix
  • 1 tablespoon butter

Spices:

  • ¼ tsp ground white pepper
  • 1 tbsp cheese spread
  • Salt (as per taste)
  • ½ tsp black pepper (coarse)
  • 1 tablespoon lemon juice

To decorate:

  • 1 tbsp cream and oregano
  • 2 bread pieces (for croutons)
  • Oil (for frying)
  • basil leaves
  • Soup buns and pieces of butter (for serving)
  1. Melt butter in a saucepan. Add garlic (grated) and chopped green onion and fry until golden.

  2. Now add grated carrot and cabbage to it, fry for a few seconds.

  3. Add veg stock and veg sweet corn soup mix (if using). Let it boil, then reduce the flame.

  4. Now add white vinegar, salt, black pepper, ground white pepper, green chili sauce, lemon juice and boiled pasta. Mix well and cook on low flame for a few minutes. Also add cheese spread.

  5. In a separate bowl, dissolve cornflour in some water and make a thin paste. Mix this paste in the soup and keep stirring continuously so that lumps do not form. Cook until the soup thickens, then remove from heat.

  6. Make croutons by frying the bread pieces and absorbing the excess oil. Ladle the hot soup into bowls, garnish with basil leaves, add cream and oregano.

Tips and Tricks:

  1. Selection of vegetables: You can also add other vegetables of your choice like mushrooms, capsicum or peas. Just be sure to cook them with the pasta or a little earlier so they become softer.

  2. Type of pasta: Use any pasta you like, like penne, fusilli or macaroni. Boil the pasta only al dente (slightly undercooked), as it will also cook in the soup.

  3. Soup thickness: If you like the soup thicker, you can add a little more cornflour paste. If it becomes too thick, you can thin it by adding a little more veg stock or water.

  4. Variety in taste: You can add a little soy sauce or lemon juice to make the soup more delicious. While serving, you can also add some chopped coriander or spring onion.
